- Rotary Rack Oven: You need a rotary rack oven to bake ladi (rusk dough). The recommended rotary rack ovens for the small scale rusk making are 44 tray, 88 tray or 132 tray. for large scale production you can consider 198 tray rotary rack oven.

- Spiral mixer: Spiral mixer kneads rusk dough. These are available in different capacities. For the above-mentioned rotary rack ovens, you can use spiral mixers of 30kg, 50kg and 60kg, respectively. Further, Hindchef’s spira mixer comes in two single and double speed. Power load is available in single and three phase, so the customers should purchase according to their power consumption requirement.

- Double Arm mixer: Alternatively, you can replace the above-mentioned spiral mixers with 50 or 90kg double arm mixers.
- Rusk cutter/slicer: You need a single rusk cutter for small scale production.

- Trays and moulds: The number of trays depends on the capacity and production of rotary rack oven. For example, in 44 tray rotary rack oven, there are 44 trays.
- Further, we keep dough in moulds of 12 inches. For Hindchef moulds, you can use 12 inch long and 2 inches thick ladi. We keep ladi in moulds for proofing and baking. Chef keep moulds inside the rotary rack oven and fix the temperature at 22 degree Celsius.

Rusk making Process
Once you are ready with the machinery and tools mentioned above, you can start making rusk.
Here are the steps of making rusks:
- Use spiral mixer for preparing dough.
- When dough is ready, keep it in moulds for two-hour proofing.
- After proofing, trolley is ready for baking. Keep baking trolley or ladi inside rotary rack oven. The baking consumes 2-2.5 liter per hour.
- Now take out ladi from moulds and keep it for cooling in ladi cooling rack.
- After cooling, cut into pieces and leave it for 15-20 miutes final baking.
